Move over gin palaces, rum joints and tequila bars. We’re making room for our very own pisco library.
– Sany Bacsi, Corporate Bar Manager
Celebrating pisco, Peru’s national drink, has turned into a COYA obsession. It started with the pisco sour, a cocktail invented in the early 1920s in Lima, the capital of Peru.
A great pisco sour has the perfect balance of liquor, citrus, bitters and sweetness, but we wanted to go one better and started infusing our piscos by steeping fruits in the liquor for weeks at a time. We now offer flavoured piscos ranging from blueberry and lavender, peach and apricot, strawberry and mint to raspberry, passion fruit, pineapple, lemongrass and cucumber to a secret spicy recipe.
But why stop there? We now offer our members the chance to infuse your very own jar of pisco, that’s labelled and kept in the library for your next visit. It’ll just get better and better….
For those who aren’t pisco fans, we also have 40 tequilas, a huge number of rums, champagnes and soft drinks behind the bar, so there’s no excuse not to have a good time!
